2 Pounds Pork Tenderloin (Garlic and Lemon Marinated, if Possible)
2 Red Apples, Thinly Sliced
1 Large Package of Baby Carrots (Approximately 2 Cups)
1 Bag of Petite Red Potatoes (Approximately 2-3 Cups)
1-3 Tablespoons Minced Garlic to taste (1 Tablespoon if using Garlic Lemon Marinated Pork Tenderloin)
3 Tablespoons Honey
2 Tablespoon Soy Sauce
1 Tablespoon Dijon Mustard
1 Tablespoon Balsamic Vinegar
1 Tablespoon Ground Cinnamon
3 Rounded Tablespoons Dark Brown Sugar
Salt and Ground Pepper to Taste
Preparation and Cooking
Open Pork Loin and put on cutting board length-wise
Using a small sharp knife (paring knife, steak knife, etc.) make a series of parallel cuts across the top of the pork loin, about 1/4-1/2 inch deep. Depth will depend on how large your apple slices are, as you will need them firmly held in place.
Place an apple slice in each cut
Put the carrots and potatoes into the bottom of the slow cooker and mix them together.
Put the pork loin with apple slices on top of the potatoes and carrots.
Place the leftover apple slices around the pork loin and on top of the carrots and potatoes.
Sprinkle 1 rounded tablespoon of brown sugar on top of the apples.
In a bowl, mix together the soy sauce, dijon mustard, balsamic vinegar, cinnamon, minced garlic, honey and 2 tablespoons of the dark brown sugar.
Drizzle sauce over the top of the pork loin, apples, carrots and potatoes.
Cook on high for 3-4 hours or low for 6-8 hours.
Soy Sauce can be swapped with Low Sodium or Light Soy Sauce without losing any flavor.
Dijon Mustard doesn't need to be name brand. The $1.99 store brand works just as well.
If you have flavored balsamic vinegar, use it as it will add a unique flavor.
Carrots or potatoes for celery or green beans.
Splenda Brown Sugar Blend can be used in place of Dark Brown Sugar. Instead of 3 Tablespoons, use 4 teaspoons and don't sprinkle it on top.
Easy Preparation Idea
Prepare everything the night before in the slow cooker pot and cover. Place in refrigerator until the next morning and then put on slow cooker. Saves time in the morning and allows for a 15 minute preparation before bed.
